Preparation
Roll out the pastry dough to a thickness of 2.5 to 2.75 mm and 60 cm wide. Brush the sheet with the flavoured oil (garlic, pepper or chill spices). Then sprinkle on the grated mature cheese pressing it down slightly. If desired, add chopped olives, chopped tomatoes and/or Mozzarella cheese. Roll up gently. Cut at 3 cm wide intervals and allow to rise on the baking tray for 60 mins. Before baking, add some decoration (halved cherry tomatoes, halved green and black olives and blocks of feta cheese).
